Cream Filling
- 250 g mascarpone
- 8 g whipped cream stabilizer
- 30 g powdered sugar
- 8 g vanilla sugar
- 100 g white chocolate
- 250 ml heavy cream
Assembly & Garnish
- Tea biscuits plain tea cookies
- 100 g fresh strawberries diced
- Shredded coconut for coating
- Extra strawberries or coconut balls for decoration
Step 1 Make the Cream
Heat 25 ml cream, pour over chopped white chocolate, stir until smooth, and let cool.Mix mascarpone, stabilizer, powdered sugar, and vanilla sugar, then blend in the cooled ganache.Gradually whip in remaining cream until fluffy.
Step 2 Add Strawberries & Assemble
Dice strawberries and fold some into the cream.Layer biscuits with strawberry cream, topping each with plain cream and fresh strawberries.
Step 3 Finish & Chill
Coat sides with cream and shredded coconut, decorate with cream swirls and strawberries.Refrigerate 4–5 hours or overnight until set.
Firm strawberries work best.
Chill longer for softer, cake-like texture.
