Ingredients

  • 1.5 lbs carrots
  • ½ large lemon juiced
  • 6 oz crumbled feta cheese
  • ½ cup dried cranberries
  • 1 tbsp toasted sesame seeds
  • 1 tbsp honey
  • 1 tbsp crispy chili oil
  • Flaky salt optional, to taste

Instructions

Shave the carrots

  • Use a vegetable peeler to create long carrot ribbons. Place them in a large mixing bowl.

Add lemon juice

  • Drizzle over the carrots and toss gently.
