- 1 loaf Italian bread e.g., Pane de Casa
- 2 garlic bulbs
- 2 –3 shallots
- 125 g butter softened
- 1 tbsp miso paste
- ½ tbsp chili flakes
- Cheese mozzarella + parmesan, to taste
- Fresh parsley chopped
- 1 –2 tbsp honey
- Olive oil salt, and pepper (for roasting)
Roast the Garlic & Shallots:
Slice tops off garlic bulbs and shallots, drizzle with olive oil, salt, and pepper. Wrap in foil and roast at 180°C (350°F) for about 1 hour, until golden and caramelized.
Make the Miso Butter:
Squeeze out roasted garlic and shallots. Mix with softened butter, miso paste, chili flakes, salt, and pepper until smooth.
Roast garlic faster: halve bulbs and roast uncovered at 200°C (400°F) for 25–30 mins.
Make ahead: Store miso butter in the fridge for up to 3 days.
Add chili oil or truffle oil for a gourmet twist.
