Quick Roasted Garlic Bread

Ingredients

  • 1 loaf Italian bread e.g., Pane de Casa
  • 2 garlic bulbs
  • 2 –3 shallots
  • 125 g butter softened
  • 1 tbsp miso paste
  • ½ tbsp chili flakes
  • Cheese mozzarella + parmesan, to taste
  • Fresh parsley chopped
  • 1 –2 tbsp honey
  • Olive oil salt, and pepper (for roasting)

Instructions

Roast the Garlic & Shallots:

  • Slice tops off garlic bulbs and shallots, drizzle with olive oil, salt, and pepper. Wrap in foil and roast at 180°C (350°F) for about 1 hour, until golden and caramelized.

Make the Miso Butter:

  • Squeeze out roasted garlic and shallots. Mix with softened butter, miso paste, chili flakes, salt, and pepper until smooth.

Assemble & Bake:

  • Spread the miso-garlic butter over sliced bread. Top with mozzarella and parmesan. Bake at 180°C (350°F) for 15–20 minutes, until golden and bubbly.

Finish & Serve:

  • Drizzle lightly with honey, sprinkle chopped parsley, slice, and enjoy warm.

Notes

Roast garlic faster: halve bulbs and roast uncovered at 200°C (400°F) for 25–30 mins.
Make ahead: Store miso butter in the fridge for up to 3 days.
Add chili oil or truffle oil for a gourmet twist.
