- 6 medium-large carrots approx. 700g
- 70g freshly grated parmesan cheese Parmigiano Reggiano
- 2 tbsp extra virgin olive oil
- 2 large garlic cloves minced or grated
- 2 tsp smoked paprika
- 1 tsp cumin powder
- ½ tsp chili powder or red pepper flakes to taste
- Handful of fresh parsley finely chopped
- Pinch of sea salt
Season
In a bowl, mix olive oil, garlic, paprika, cumin, chili, parsley, and salt. Toss carrots until evenly coated, then press the flat sides into grated parmesan.
Use vegan parmesan or nutritional yeast for a dairy-free version.
For extra crispness, preheat your baking sheet.
