Ingredients

  • 6 medium-large carrots approx. 700g
  • 70g freshly grated parmesan cheese Parmigiano Reggiano
  • 2 tbsp extra virgin olive oil
  • 2 large garlic cloves minced or grated
  • 2 tsp smoked paprika
  • 1 tsp cumin powder
  • ½ tsp chili powder or red pepper flakes to taste
  • Handful of fresh parsley finely chopped
  • Pinch of sea salt

Instructions

Prep

  • Preheat oven to 400°F (200°C). Peel and slice carrots lengthwise into even sticks.
    Cutting fresh carrots lengthwise on a wooden board.

Season

  • In a bowl, mix olive oil, garlic, paprika, cumin, chili, parsley, and salt. Toss carrots until evenly coated, then press the flat sides into grated parmesan.

Roast

  • Arrange carrots cheese-side down on a baking sheet. Bake for 20–25 minutes until golden and crisp. Flip with a spatula and serve warm.
