- 1 lb chicken breast diced
- 1 lb smoked beef sausage sliced (andouille or kielbasa style)
- 12 oz penne or rotini pasta
- 1 cup shredded smoked cheddar cheese
- 1 packet ranch seasoning mix
- 4 cups chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish optional
steps:
Dice the chicken and slice the sausage. Set aside.
In a large pot, heat olive oil over medium. Add the chicken, season with salt and pepper, and sauté for 5–7 minutes until golden and fully cooked.
Add the sliced sausage and cook for another 3 minutes until warmed through.
Pour in the dry pasta and chicken broth. Stir to combine and ensure pasta is covered.
Sprinkle in the ranch seasoning. Bring everything to a boil, then reduce heat to low and simmer for 10–12 minutes, stirring occasionally, until pasta is just tender.
Turn off the heat and stir in shredded cheddar cheese until melted and creamy.
Taste and adjust seasoning as needed. Garnish with fresh parsley if using.
