- 6 slices bacon cut into small pieces
- 2 medium chicken breasts cut into bite-size pieces
- 1 large garlic clove minced
- 1/2 cup chicken broth
- 1 cup heavy/whipping cream
- 1/4 tsp Italian seasoning
- 1 lb uncooked potato gnocchi
- 1/2 cup freshly grated Parmesan cheese
- Salt & pepper to taste
In a deep skillet, fry bacon until crispy (about 10 mins). Remove and set aside, reserving 1 tbsp bacon fat.
Add diced chicken to the skillet and cook for 2–3 minutes until white on the outside.
Stir in minced garlic and sauté briefly.
Reduce heat, then add broth, cream, Italian seasoning, gnocchi, and return bacon. Stir, cover, and cook for 4 minutes.
Uncover and simmer a few more minutes, stirring until sauce thickens.
Stir in Parmesan and season with salt and pepper to taste. Serve immediately.
- Use shelf-stable gnocchi found in the pasta aisle—no need to boil.
- You can add spinach or mushrooms for variation.
- Leftovers keep well in the fridge for 3–4 days but don’t freeze.
