- 1 lb boneless skinless chicken thighs or breasts
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1/2 cup honey BBQ sauce
- 1 tbsp olive oil
Heat olive oil in a large skillet over medium heat.
Add chicken and cook for 5–7 minutes until browned on both sides.
Push chicken aside and stir in uncooked rice; toast for 1–2 minutes.
Pour in chicken broth and BBQ sauce. Stir to combine.
Cover and simmer on low heat for 20 minutes, until rice is tender.
Remove from heat and let sit, covered, for 5 minutes.
Fluff rice with a fork, slice chicken, and serve hot.
