Ingredients

Brownie Batter Layer

  • ¾ cup creamy peanut butter
  • cup + 1 tbsp maple syrup
  • ¼ cup coconut oil melted and cooled
  • 1 tsp vanilla extract
  • ½ cup cocoa powder
  • ½ cup + 3 tbsp almond flour
  • Pinch of sea salt

Date Caramel Layer

  • 4 Medjool dates pitted
  • 1 tbsp maple syrup
  • 1 tbsp peanut butter
  • ½ tsp vanilla extract
  • Unsweetened non-dairy milk as needed, to thin
  • Pinch of salt

Chocolate Topping

  • ½ cup chocolate chips
  • 2 tsp coconut oil
  • Flaky sea salt for topping

Instructions

Step 1 – Make the Brownie Batter Base

  • Mix peanut butter, maple syrup, melted coconut oil, vanilla, cocoa powder, almond flour, and salt until thick and fudgy. Press the mixture into a parchment-lined pan to form the brownie batter base, then chill while you prepare the caramel.

Step 2 – Add the Caramel Layer

  • Blend Medjool dates, maple syrup, peanut butter, vanilla, salt, and a splash of non-dairy milk until creamy. Spread evenly over the brownie base.

Step 3 – Finish with Chocolate

  • Melt chocolate chips with coconut oil, pour over caramel, and sprinkle sea salt. Chill for 1 hour, then slice into bars and enjoy!
