Ingredients

  • 4 large egg yolks
  • 1/2 cup 100g granulated sugar
  • 1/4 cup 30g cornstarch (Maïzena)
  • A pinch of salt
  • 2 cups 480 ml whole milk
  • 2 tablespoons 30g unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup 170g semi-sweet or milk chocolate, chopped
  • 1 cup 240 ml heavy cream
  • 1 package 250g graham crackers or Petit Beurre biscuits
  • 1/2 cup 120 ml milk, for dipping biscuits
  • 1 tablespoon unsweetened cocoa powder for dusting

Instructions

Step 1 Pastry Cream (Custard)

  • Whisk yolks, sugar, salt, and cornstarch until smooth.
    Heat milk until simmering.
    Temper eggs with hot milk, then return mixture to saucepan.
    Stir until thickened, 3–5 minutes.
    Remove from heat, stir in butter and vanilla. Cover and cool.

Step 2 Chocolate Ganache

  • Heat cream until simmering.
    Pour over chopped chocolate. Let sit 2–3 minutes.
    Stir until glossy and smooth. Set aside to cool slightly.

Step 3 Assembly

  • Dip biscuits briefly in milk, layer in dish.
    Spread half the custard.
    Add another layer of dipped biscuits.
    Spread remaining custard.
    Pour ganache over top, spread evenly.
    Dust with cocoa powder.
    Chill 4–6 hours or overnight before slicing.
