This one pan chicken potatoes green beans recipe is an easy, hearty dinner baked on a single sheet. It’s buttery, herby, and ready with minimal prep.

- 12 ounces green beans, cut into 1-inch pieces
- 1 lb. boneless, skinless chicken breasts, cut into chunks
- 1 lb. red or Yukon gold potatoes, cut into 1-inch pieces
- 1/4 cup salted butter, sliced
- 1 1/4 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried parsley
- 1/4 teaspoon black pepper
- 1/4 teaspoon dried basil
- Pinch of ground thyme
- Pinch of celery salt
- Pinch of mustard seed`
Instructions
- Preheat oven to 350°F.
- Mix all herbs and spices in a bowl.
- Place chicken, potatoes, and green beans in a 9×13 baking dish.
- Distribute butter slices evenly over the top.
- Sprinkle herb blend over entire dish.
- Bake uncovered for 50–60 minutes until chicken is fully cooked and potatoes are tender.
Notes
- For a shortcut, use 1 packet of Italian dressing mix instead of individual herbs.
- Swap green beans for carrots or asparagus as needed.
- To reheat, warm in a 250°F oven for 10–15 minutes or microwave until hot.
- Let frozen leftovers defrost in the fridge overnight for best results.
